Son of a Butler was formed with the intention of helping independent pubs, bars and restaurants improve their food and wine offering with simple, fresh seasonal menus, well sourced produce and amazing wine. 

We offer the same level of support to independent operators that the big hospitality groups are able to give to their sites. With a proper procurement strategy we can help our clients source great produce, reduce costs and maximise their profit margins. 

We develop dishes that show produce at its best and plan menus that work with the seasons. We will put in place the right operating procedures to ensure things run smoothly and professionally and that the customer journey is seamless and easy to deliver time after time. Once that is in place we help our clients get their message across to their new customers with fresh, vibrant content and a structured media and marketing campaign.

Our founder, Peter Wallhead, has a wealth of experience within the industry. Having started out as a chef he has worked in hospitality management domestically and internationally. With a background in procurement, having worked as the Group Purchasing Manager for the largest independently owned restaurant group in the UK, he has extensive experience of menu development, new openings and new concept development and has worked with some of the best suppliers in the country.

As the wine buyer for thirteen sites in Central London Peter curated award winning wine lists that catered for all sectors of the market. Having worked extensively within the wine trade he has built up a network of contacts with the leading suppliers to the on-trade. Peter has also been an owner-operator so has first hand experience of running his own hospitality businesses and the work and effort involved in making a business a success. 


Our founder grew up on the grounds of a stately home, his father was the butler (hence the name of our consultancy firm) and his mother the cook (think Downton Abbey, but in the 80’s, with no horse drawn carriage, marginally less drama and certainly less staff). He has been around fine wine from an early age, his father was a qualified Master Sommelier and managed an enviable cellar. Peter spent much of his childhood in the kitchen watching his mother turn seasonal produce from the kitchen garden into food fit for a King, or at the very least a Lord and Lady. 

A life long fascination with good food, seasonal produce and excellent wine followed and has been the driving force behind Peter’s career and his success within the industry. That passion is behind the founding of Son of a Butler and our dedication to helping our clients deliver the best food and wine to their customers and to be successful in business.
